Ingredients:
0.5 oz ligusticum (Dong-kwai)
6 dried black dates
10 oz pigs liver
5 oz lean pork
2 slices ginger
1 tbsp Shaoxing wine
Seasoning:
salt
Method: 1. Shred ligusticum. Wash black dates.
2. Wash and slice liver. Wash lean pork. Blanch both in boiling waterand rinse.
3. Boil suitable amount of water. Add ligusticum, dried black dates, lean pork and ginger. Bring to a boil. Then parboil over low heat for 2 hours. Add Shaoxing wine and liver.
4. When boiling stir in seasoning. Ready to serve. Dish up liver and serve with light soy sauce.
