Cold Duck Webs with Mustard

Ingredients:

20 duck webs, bones removed

2 green pepper

1 red chili

2 slices ginger

2 stalks spring onion

ice water






Mustard Ingredients:

1 tbsp mustard powder

2 tsp sesame oil

1/2 tsp ginger rice

1/2 tsp crushed garlic

1/2 tsp salt

1 tsp sugar

1 tsp white vinegar

1 tsp cold boiled water



Seasoning:

3 tbsp white vinegar

3 tbsp water

2 tbsp granulated sugar

1/2 tsp salt



Method:

1. Rub duck webs with salt, then rinse with water.

2. Boil water, put in ginger, spring onion and duck webs.

3. Parboil for 25 minutes over low heat until tender.

4. Remove duck webs and cool in ice water.

5. Drain.

6. Mix mustard powder with some water and blend into paste.

7. Cover and bake for 30 minutes.

8. Then add remaining mustard ingredients.

9. Stir well and dish aside.

10. Wash green pepper and red chili, seed.

11. Cut into rings.

12. Marinate with seasoning for 20 minutes.

13. Dish up and top with duck webs.

14. Pour mustard sauce over duck webs.

15. Serve.
